Beets are the type of vegetable that when you bite into them there is this initial “cringe” reaction, but as soon as the initial shock of the earthy flavors dissipate, you are able to enjoy them. Their smooth texture, beautiful deep red coloring, and of course in this recipe, their delicious flavor will get you through the next few summery months.
In honor of beet season I wanted to create an extremely simple recipe for LaVegetariana- ites to make. Crispy, crunchy, smooth and “meaty” are words to describe the “Beet” the Heat Mix. Not one ingredient stands out more and all are equally healthy and fun.
Beets have powerful nutrients that help protect against heart disease, birth defects and certain cancers, especially colon cancer. They are high in antioxidants vitamin C and manganese, as their red color comes from betalain antioxidant pigments. The unique phytonutrients in beets provide antioxidant support in a different way than other antioxidant-rich vegetables. Together with antioxidants, beets provide anti-inflammatory agents, as well as detoxifying agents to consumers. Making juices with beets is ideal for a quick boost of nutrients and minerals, especially iron! Ultimately, beets are great for improving and maintaining the health of our digestive tracts and cardiovascular functions.
So bask in the goodness of one of the ancient Romans’ most prized vegetable- with time you can learn to love them too!
