Crispy Pesto Italian Rolls

Crispy, crunchy, gooey, chewy cheese and pesto filled rolls that you can fry up in minutes…sound interesting? Well, you’ve come to the right place to get the details on how to make your own.

There’s a story around this recipe that is quite random. I was in CVS Pharmacy over the weekend and I decided to flip through a generic recipe booklet that was hanging off of the corner of an aisle and when I flipped through it, I noticed a recipe that used a loaf of bread and some other ingredients to make these cigar roll-ups. Well, I was in desperate need of an appetizer recipe for a party and I decided I could take this recipe and make it my own. Why not make it Italian? How hard could it be to make it vegan? Not hard at all…

I picked up a loaf of bread at Whole Foods, some pesto sauce, marinara sauce and of course, Daiya Cheese. The recipe was so easy and tasty and it is surely something you could do at any age. If you have children, you could leave them to take the crust off of the bread and sprinkle the cheese. If you’re having a dinner party, get a bunch of people to help remove crust, spread pesto, sprinkle cheese, roll up the “cigars” and fry them up.

I did it with my sister and we had a blast. What a great spin on a simple recipe! It’s like a fancy vegan mozzarella stick!

The true test: having your Italian father try one and him actually like it…I’d say that’s a success.
